Cheesy Eggs & Toast

Quick and Easy Lunch - getting back on the healthy wagon

Ingredients

  • 1 tbsp. Coconut Oil
  • 2 slices Martin's Potato Bread
  • 1 serving Habanero Cheese
  • 2 Eggs

Instructions

  • Cut the Cheese in thin slices and let sit out for a few minutes so the cheese melts faster.
  • Toast the bread - do not butter - slice into little pieces.
  • Pour 1 tbsp. of coconut oil into the skillet - low to medium heat
  • Pour the eggs in - crack the yolk of you want over hard eggs
  • Cook for a few minutes and flip
  • Lay the cheese on top and turn down - put a lid on the eggs
  • When finished slide the eggs to the plate with the coconut oil that did not cook away.
  • The bread squares can be dipped in left over coconut oil and eaten with the egg.
