Cut the Cheese in thin slices and let sit out for a few minutes so the cheese melts faster.
Toast the bread - do not butter - slice into little pieces.
Pour 1 tbsp. of coconut oil into the skillet - low to medium heat
Pour the eggs in - crack the yolk of you want over hard eggs
Cook for a few minutes and flip
Lay the cheese on top and turn down - put a lid on the eggs
When finished slide the eggs to the plate with the coconut oil that did not cook away.
The bread squares can be dipped in left over coconut oil and eaten with the egg.
