YES!!! You can make these muffins with just 2 ingredients. However, they are best if ya throw in a few additional items. The boy and I had a good time making these muffins last year in school with his class. I am pretty sure he wanted to make them because he was reminiscing of the good old days when he use to go to school. As a side note… please pay no attention to me in this video…. not sure wheat is going on with my hair.. or me for that matter.
Alright so to make this simple…. you mix a boxed cake mix and canned pumpkin. 12 muffins cups. 325 for 20minutes. DONE….
Now here is what we did…
Not really sure what is going on with his hair here – which why in the video he has a hat on!!
2 Ingredient Pumpkin Muffins
- 1 box spiced cake mix
- 1 can pumpkin (15oz)
- 1 cup chocolate chips
- 2 tablespoons raw sugar
- 1/2 cup cream cheese frosting
- pre heat oven 325 and line the cupcake pans
- in a large bowl
- mix canned pumpkin and spiced cake mix
- fold in chocolate chips
- scoop into cupcake liners
- sprinkle with raw sugar
- bake for 20min @ 325
- pull out of oven to cool
- melt the cream cheese… 20 seconds of so
- drizzle the cream cheese on muffins
- add a candy corn
These are the muffins UNCOOKED. They have RAW sugar ontop.
Cream cheese frosting (cause we do not always have time) melted and drizzled on top.
My sisters gifted me this. To be honest when I got it I thought it wouldn’t work. To my surprise… it was AMAZING!!!
